What’s in Season in May?

May is all about Spinach!

I like mine creamy and fine. This is how I make perfectly creamy spinach. You’ll need about a pound of spinach as it shrinks when cooked.
Bring water to a boil and then add your finely chopped spinach. Bring it back to a boil and cover for a minute. Remove from stove and drain well. Put drained spinach back into the pot and add cream mix.
The Creamy Mix
On a low flame melt two to three solid tablespoons of butter with about three heaping teaspoons of flour. When the butter has melted, slowly whisk in 3/4 cup of chicken broth and 3/4 cup of cream mixed together. (or half and half,or even milk will actually suffice).
Slowly bring up the heat until mixture thickens. Add salt and pepper to taste. Be careful not to over salt.( Chicken broth is usually salty to begin with.)
Now grate a sharp cheddar cheese over the spinach in cream sauce and serve immediately!
