What’s in Season in March?

March is the month for Salmon.  It’s usually found in supermarkets all year round but March is when Salmon is best and easy to find fresh in most shops.  There are a number of ways to prepare salmon but we find most people like to grill it so we’ve put together 10 ways to cook salmon for you.

  1. Marinate in red wine vinegar salad dressing and then grill.
  2. Season and then brush on good Dijon mustard, sprinkle with dill and thyme. Place in oven proof dish and bake at 200’C until it flakes. Serve with new potatoes and green beans.
  3. Combine bread crumbs, diced kalamata olives, chopped sundried tomatoes, Italian seasoning. Season the salmon and brush with Dijon mustard and then top with the crumb mix. Bake in oven at 200’C.
  4. Thin curry paste with canola oil until runny enough to brush on fillets and grill as usual. When ready, sprinkle with chopped green onion and serve with basmati pilaf.
  5. Combine parsley, cilantro, garlic and onion in a food processor then add a drizzle of lemon juice and olive oil. Process to make a paste then cover the fillet with a thin layer.  Wrap in oiled foil and grill until cooked.
  6. Place salmon in an oven proof dish with a mixture of dry white wine, lemon juice, olive oil, lemon zest and dill.  Marinate for 1 hour and then grill. Serve with fresh dill and a lemon twist.
  7. Wrap the fillets in slices of prosciutto then bake or grill.  Serve with a drizzle of balsamic or a flavoured olive oil.
  8. Combine 1/3 neutral oil, 1 tsp sesame oil, 2 tsp rice vinegar, salt and pepper and 2 green onions to make a sauce.  Serve on the side with the grilled salmon.
  9. Combine mayonnaise, sour cream, chopped onions, chives. When smooth spread over the fish and bake.
  10. Season the salmon. Put into foil. Add extra virgin olive oil,lemon slices, white wine and parsley, wrap up and grill for 8 minutes.
